Shuffling Mushroom does not untap during your untap step.
At the beginning of your upkeep, put a spore counter on Shuffling Mushroom.
When Shuffling Mushroom becomes untapped, remove all spore counters and create a token that is a copy of Shuffling Mushroom for each counter removed this way.
