Symbolism is new symbols for the energies in the game. Normal colors, just new symbols on them as requirements for cards.
There's a Keyword: Symbolism (sample) - Imagine a new symbol for the cards involved. Sometimes it's there to transform cards into symbol versions as well, but symbols are either rare or expensive to achieve in-game.
